It works like this.

The number is always going to be a multiple of nine.

This is because whatever number you pick you subtract 1 multiple of its mod 10 (the units) away from it and 1 multiple of its div 10 (the amount of times 10 will go into the number rounding down).

for example your number is 27. when you subtract 9 (2+7) from it you eliminate the units (7) and subtract a further 2 (the amount of times 10 will go into 27 rounding down). This will result in the number always being a multiple of 9.

10 - 1 = 9
20 - 2 = 18
30 - 3 = 27
40 - 4 = 36
50 - 5 = 45
etc etc.

You just have to do two numbers together to see the "trick" i.e..
15 - (1+5) = 9
16 - (1+6) = 9
And then see that every multiple of 9 is the same image. (So dont stare at one number like they tell you to)

The maths would look something like this
Represent the two digit number xy as 10x + y (e.g. 69 = 10*6 + 9 )
10x + y -( x +y) = 9x
You can see no matter what x and y is the result will always be a multiple of 9
